You can always find strawberries in our house during the summer months. I usually eat them sliced up and plain but decided to use them in a cocktail! My friend, Lori from Blank Slate surprised me a few weeks ago with a cocktail book and some chic coupe glasses. I was feeling particularly uninspired so the gift came at the perfect time. I flipped through ‘The Coupe’ by Brian Hart Hoffman and came across the Strawberry Sparkler recipe from Brennan’s Restaurant in one of my favorite cities- New Orleans, Louisiana! The recipe sounded so refreshing and flavorful, I had to recreate it with my own twist. Since I am watching my sugar intake, I used less sugar (1/2 cup sugar for 4 drinks versus 1/4 cup per drink) and added a bit of vodka for some punch. Believe me when I say this summer strawberry sparkler cocktail is delicious and perfect for having a few with the girls!

Summer Strawberry Sparkler Cocktail
- 1 Pint Fresh Strawberries, Chopped Plus a few for garnish
- 1/2 Cup Sugar can replace with honey (add more) and/or sweetener
- 1/2 Cup Fresh Basil Plus a few for garnish
- 1/2 Bottle Sparkling White Wine or Champagne (Brut)
- 4 oz Vodka (1 oz per drink)
- 3/4 Cup Hot Water
Muddler the sugar and strawberries together in a bowl. If you need to squeeze with clean hands until the strawberries have all been smushed and the sugar has been absorbed.
Add the hot water (make it steaming hot) to the strawberry sugar mixture.
Add the basil leaves and stir.
Let the mixture sit for 10-20 minutes.
Strain and pour the strawberry basil syrup into coup glasses until they are halfway full.
Add the 1 oz of vodka and gently stir.
Fill the remainder of the glass with bubbly.
Garnish with a strawberry and basil leave.
