I have kind of been on a salad kick lately, (evidence here, herehere and here) which is a good thing! With an abundance of fresh fruit and veggies during the summer months, it makes whipping up a delicious salad both easy and with many combinations.  Last weekend while meal prepping, I realized I had not made one of my favorite salads of all time in quite some time- Strawberry Poppyseed Salad.  This is a go to salad in my family (at least amongst the women in my family) and could not be easier to make.  The best thing is the salad dressing is super healthy and can be made in large quantities. Strawberry Poppyseed Salad

Servings 4

Ingredients

  • 6 cups Fresh Spinach
  • 5 cups Strawberries, Sliced
  • 1/2 cup red onion, thinly sliced
  • 1 cup Gorgonzola cheese, crumbled
  • 1/2 cup almonds, slivered
  • 3/4 cup olive oil
  • 1/2 cup apple cider vinegar
  • 3 Tbsp honey
  • 2 Tbsp poppyseeds
  • salt and pepper to taste

Instructions

  1. Place oil, vinegar, honey, poppyseeds, salt + pepper plus 1 cup of strawberries in a food processor, blend well

  2. Place all other ingredients together in large bowl and top with dressing + gently toss

  3. Enjoy!
