My First Attempt at Homemade Spanakopita

It may be cliché but when picking a favorite Greek dish, my pick is Spanakopita hands down.  I could eat an entire pan of it! The warm buttery, flaky and feta-y-ness is something that the ultimate comfort food for me. I just can’t get enough of this stuff.  I heard making your own spanakopita is extremely time consuming and tricky (especially if you are making your own phyllo dough!) but decided to give it a try a few weekends ago. I searched the internet universe for the best homemade spanakopita recipe. I found things I liked about many of them but none of them seemed to have it all. (I wanted to just use feta versus adding ricotta, loved the idea of using scallions and onions, etc) Soooo I decided to combine some ideas and make my own recipe.

Now making my own phyllo dough was out of the question.. but making filling for the spanakopita was relatively easy.  Assembling the pie took a lot of time and TLC (man that phyllo dough is fragile and thin!) but MAN did it turn out great! Check out the recipe below! Try not to eat the entire pan now!

The Best Homemade Spanakopita

Ingredients

  • 6 scallions, green and white parts thinly sliced
  • 1/2 large white onion, chopped
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 15 oz fresh spinach, chopped
  • 12 oz crumbled feta cheese
  • 3 large eggs
  • 2 packs of phyllo pastry sheets (you will need about 28 sheets)
  • 2 sticks butter, melted

Instructions

  1. Thaw the phyllo (filo) dough according to the instructions

  2. Preheat the oven at 350 degrees

  3. Sautée the chopped scallions and onions in a large pan on medium high heat with the olive oil

  4. Add the garlic

  5. Reduce heat to medium low, slowly add the spinach

  6. Continue to wilt spinach in batches

  7. Mix all of the wilted spinach and onions in a bowl and set aside to cool (you can make this ahead of time and place in the refrigerator for later)

  8. Melt butter and brush all sides and bottom of a 9X13 glass baking pan

  9. Once the spinach and onion filling is cooled, mix in evenly the crumbled feta and then the eggs

  10. Lay down 1 sheet of phyllo dough, brush a light coat of butter on top of the sheet, lay another sheet down, brush butter- repeat until you have 6 layers of dough all with butter brushed on top (yes brush butter on EACH layer)

  11. Place 1/3 of the spinach/feta mixture evenly on top of the pyhllo

  12. Layer 6 more layers of phyllo pastry sheets, brushing the top of each sheet with melted butter

  13. Place another 1/3 of the spinach/feta mixture evenly on top of the pyhllo

  14. Layer 6 more layers of phyllo pastry sheets, brushing the top of each sheet with melted butter

  15. Place another 1/3 of the spinach/feta mixture evenly on top of the pyhllo

  16. This will be your final "layer". Layer 10-12 sheets of phyllo, making sure you brush each layer with melted butter (even the tippy top layer)

  17. Place in oven and cook for 45 mins-1 hour

  18. Best is served soon after being baked in oven

  19. If need to reheat- heat in oven at 350 for 15 mins
