So I guess it is officially Spring but it is feeling pretty chilly here in Maryland. So much in fact that I decided a healthy turkey chili was needed to warm me up. We had a few weeks of Springy weather and then boom- freezing temperatures and snow. The buds and small leaves that were peeking out have either frozen off or retreated. So much for an early spring that we were all hoping for.
Anywho. I am trying to make the best out of the situation with cozy fires, hot tea and comfort food. This turkey chili hits just the spot and is great for lunches. It can also be frozen for later consumption if you don’t want to have the same thing all week long.
Just brown the meat and throw all the ingredients in a big stew pot for a majority of the day and you have some amazingness on your hands.

Healthy Turkey Chili
An easy and healthy turkey chili perfect for a chilly day
- 4 lbs Lean Ground Turkey
- 40 oz Canned Red Kidney Beans Drained
- 15 oz Canned Black Beans Drained
- 15 oz Canned Corn Drained
- 40 oz Canned Diced Tomatoes Drained
- 1 large Onion, diced
- 6 oz Tomato Paste
- 6 oz Water
- 2 Tbsp Chili Powder
- 1 Tbsp Cumin
- 2 Tbsp Paprika
- 1/2 Tbsp Onion Powder
- 1/2 Tbsp Garlic Powder
- Salt & Pepper to taste
- For garnish: Avocado, Sour cream, Cilantro, Jalapeno, Mexican Shredded Cheese
Brown ground turkey with a bit of olive oil and spices at the bottom of a large pot
Add all ingredients (less garnish) slowly
Let simmer for 5 hours, stirring occasionally
Serve hot and garnish with cilantro, sour cream, Mexican cheese, avocados, jalapeno slices and tortilla strips if desired.
