Healthy Crock Pot Beef Stew

We are finally supposed to get some snow this week (not holding my breath) and I could not be more excited. This winter has been unusually warm here in Maryland and I am well overdue for a snow day.  In prep for being snowed in, I am planning on making something warm and comforting (but healthy) to curl up by the fire with. This healthy crock pot beef stew is simple, healthy and perfect for winter weather.  Check out the super easy recipe below.

Psstt the recipe makes a lot of stew and can be frozen for later consumption!

Healthy Crock Pot Beef Stew

Author Lace & Grace

Ingredients

  • 64 oz Beef Broth
  • 3 lbs Beef Churck
  • 3 cloves garlic, minced
  • 2 bay leaves
  • 3 sprigs thyme
  • 1 1/2 cups Carrotts, chopped
  • 1 1/2 cups mushrooms, sliced
  • 1 1/2 cups celery, chopped
  • 1 small onion, sliced thin
  • 3 Tbsp Worchestire Sauce
  • 2 cubes beef bouillon
  • Salt and Pepper to taste

Instructions

  1. In a large pan with olive oil, brown the beef chuck on all sides

    Add all ingredients to the crock pot

    Cook on high for 8 hours

    Check veggies (if veggies are still firm- cook on high for another 2 hours)

    Remove bay leaves and thyme

    Enjoy!
