I love having company over, but unexpected visitors (or ones on short notice) can sometimes be stressful! What can I offer to drink and eat? Making a quick snack for your guest(s) does not need to be a big ordeal. You will be surprised how many things you have in your pantry and refrigerator currently that will create a simple but elevated appetizer. For me, I always have some sort of cracker, cheese, baking nut, fruit and honey on hand, making my go to snack for guests a breeze. This time around I happened to have some fresh blackberries along with my favorite of all the cheeses- goat cheese! Putting the two ingredients together on a cracker created delectable and easy blackberry goat cheese bites! I added chopped walnuts for some crunch and honey for a bit of sweetness. These babies turned out amazing!
As far as drinks go, I always make sure I have a nice bottle of wine or two in the bar for sharing. - 15 crackers (I like the large, round, whole wheat ones!)
- 2 oz goat cheese (leave out for about 10 mins before using)
- 15 fresh blackberries
- 2 Tbsp chopped walnuts
- 1 Tbsp honey
- 1) With a knife, spread the softened goat cheese on the cracker
- 2) Sprinkle chopped walnuts on top of cheese
- 3) Top with whole blackberry (press down slightly if it tries to roll off)
- 4) Drizzle the honey over all crackers
- 5) Enjoy
