Salmon Burgers with fresh avocado salsa

Buying salmon in bulk has been on repeat so far this year. Dinner time usually consists of baked salmon topped with a bit of EVOO, lemon slices and herb seasoning and a side of asparagus.  I wanted to switch it up a bit and decided salmon burgers sounded delicious.  After making the patties and looking around for a sauce to snazz up the burger other than your typical dill sauce- I saw some folks on Pinterest were topping the salmon burgers with fresh avocado salsa (like here) and I thought why not do both! 

During the summer months I live off of this Peach, Tomato and Avocado Salad, so opted to make it again as the burger topping- sans the peaches! I could (and do) eat full bowl of this stuff it is so good. 

For the dill sauce- I just mixed together Greek yogurt, dill, lemon juice, salt and pepper together and spread it on the bottom half of the brioche bun.

For the Salmon Burger
  1. 1 1/2 Lb Salmon Fillet, skinned and cubed
  2. 1 Eggs
  3. 1 1/4 Cup Panko Crumbs
  4. 2 Tbsp Lemon Juice
  5. 1 Tsp Cumin
  6. 1 Tsp Chili Powder
  7. 1 Tsp Garlic Powder
  8. 1 Tsp Paprika
  9. Olive Oil for Pan
  10. 5 Brioche Buns
For the Avocado Salsa
  1. 1 Avocado, chopped
  2. 1/2 Cup Tomatoes, diced
  3. 1/2 Cup Red Onions, chopped
  4. 2 Tbsp Lemon Juice
  5. 1 Tbsp EVOO
  6. 1 Tsp Paprika
  7. Salt and Pepper to taste
For the Dill Yogurt Sauce
  1. 3/4 cup Greek Yogurt
  2. 2 Tbsp Lemon Juice
  3. 2 Tbsp Dill, chopped
  4. salt and pepper to taste
For the Burger
  1. Mix all the burger ingredients (less the olive oil and bun 🙂 ) together in a medium bowl
  2. Heat a large pan on medium heat with a small amount of olive oil
  3. In a 1 cup measuring cup pat the mixture down until about 3/4 of the way full (to create shape)
  4. Turn over into pan
  5. Sear on each side until golden brown
  6. Bake in the oven at 375 degrees for 10 mins on each side
  7. Set aside
For the Avocado Salsa
  1. Gently combine and set aside
For the Dill Sauce
  1. Mix all ingredients together and refrigerate until ready to use
