January is zooming by at a fast rate, am I right? What New Year’s resolutions and goals did you make for yourself? Growing up, I always thought resolutions to be cheesy, but as I have grown older now see why they are important.  Trying to better yourself is a good thing! One of my personal goals year after year has been to try to eat better.  One way to stay on  track is to find easy but flavorful recipes that make you excited for your meal. This Heathy and Colorful Sushi Bowl is not only delicious but you will want to make it again and again! You can swap out the sticky rice for brown rice to make it even more healthy.  I topped the bowl with an Asian soy sauce dressing and a bit of creamy siracha (made with light sour cream)

Healthy Sushi Bowl

  1. -2 cups, sushi rice (can replace with brown rice), cooked
  2. -1/2 cup cooked edamame, cooked
  3. -1/2 cup red bell pepper, sliced
  4. -1/2 avocado, sliced
  5. -1/2 cucumber, pickled and sliced ***
  6. -1/3 cup sliced carrots
  7. -4 slices of smoked salmon
  8. -Sushi Niri
  9. For the Asian Dressing
  10. -2 Tbsp low sodium soy sauce
  11. -2 Tbsp rice vinegar
  12. -1 Tbsp sesame seed oil
  13. -1 garlic clove, minced
  14. -1 scallion, minced
  15. -1 tsp sugar
  16. -1 Tbsp sesame seeds, toasted
  17. For the Creamy Sriracha
  18. -3 Tbsp light sour cream
  19. -1 Tbsp sriracha (or more if you like!)
  1. Put the cooked rice in a bowl
  2. Arrange veggies around
  3. Place salmon in middle
  4. Pour dressing (whisk all dressing ingredients together)
  5. Drizzle creamy sriracha (mix all sauce ingredients together)
  6. Serve with Sushi Niri if desired
  7. Enjoy!
  1. ** to pickle cucumbers quickly put boil 1 cup water, 1/4 rice vinegar, 1/4 apple cider vinegar, 1 Tbsp soy sauce, crushed red pepper, pepper, minced scallion and a pinch of sugar into a jar. Add sliced cucumbers and close. Sit for about 15 mins or overnight.
