Italian Roasted Potatoes

I know dinners around the holidays are focused on one thing- the meat!- but you can’t forget about the side dishes! For a starch- I usually do some form of potatoes. My favorite way to cook potatoes is to roast them! Since we just got back from our trip to Italy (recap so far here) I decided to put an Italian spin on the roasted potato.  This easy Italian roasted potato recipe is quick and you will want to eat the whole pan in one sitting!   1. 1 pound pee wee baby potatoes, cut into halves
  2. 2 Tbsp olive oil
  3. 3 garlic cloves, minced
  4. 2 tsp of Italian seasoning (herbs)
  5. 1 tsp salt
  6. 2 tsp paprika
  7. 1/4 cup Parmesan cheese (or more if you like), shredded
  8. 1/2 Tbsp fresh parsley, chopped (plus more to garnish before serving)
  9. 2 Tbsp unsalted butter, cubed
  1. Preheat oven to 400 degrees F
  2. In a cast iron skillet, cook the halved potatoes over medium heat with the olive oil
  3. Cook for 5 minutes or until golden brown with a slight crisp.
  4. Turn potatoes and cook the other side
  5. Add minced garlic, stir and allow garlic to brown
  6. Add the Italian seasoning, salt and paprika; stir and remove from stove
  7. Mix in the parsley
  8. Top with cheese
  9. Place in over for about 10-15 minutes or until to desired crispiness
