Wedge Salad Skewers

I made these Hawaiian Kabobs last month and had a ton of skewers left over.  I was torn on what to use them on- should I make grilled BBQ shrimp skewers or maybe a fun s’mores on a stick dessert? I couldn’t decide! With football season back in full swing,  I thought why not make a healthier snack that is easy to serve as an appetizer on game days!?  These bacon and blue wedge skewer salads could not be easier or more fun to make! Get the whole family involved in making this fun and delicious snack!

Wedge Salad Swewers

  1. Wooden skewers
  2. 1 head of lettuce
  3. 1 quart of cherry tomatoes
  4. 1/2 pound bacon, cooked (do not cook too crispy)
  5. 1/4 cup of blue cheese, crumbled
  6. 1/4 EVOO
  7. 1/4 Balsamic
  8. 1 tbsp dried oregano
  9. 1 tsp dried basil
  10. Pinch of salt & pepper
  1. cut lettuce head into small square wedges
  2. Layer lettuce, half a piece of bacon (folded in half) and a cherry tomato
  3. Repeat until you have filled the skewer
  4. Once you have used up all the veggies, stack on a plate and set aside
  5. Pour EVOO, balsamic, dried herbs and salt & pepper into a small mason jar
  6. Shake
  7. Drizzle over salad skewers
  8. Crumble the blue cheese over the skewers
  9. Serve immediately or chill in fridge for later consumption
