I cannot believe we are entering the end of summer. Where has the time gone? Fall may be on its way but the Hubs and I aren’t putting the grill away anytime soon. Once again we had a ton of veggies and looked for creative ways to use them (for example my delicious chilled cucumber & dill soup). In walks in the Hawaiian Teriyaki Kebobs which are perfect for summer! This easy teriyaki sauce pairs perfectly with the pineapple, chicken and other veggies; serve them on a bed of rice to complete the meal. This recipe makes a ton and are fun to make together for date night or with the kiddos.

Ingredients
  1. 5 boneless chicken breasts
  2. 1 pineapple, cubed
  3. 1 green pepper, chopped large
  4. 1 red pepper, chopped large
  5. 1 white onion, chopped large
  6. Pack of cherry tomatoes
  7. 1 zucchini, cubed
  8. Kabob Skewers
  9. 1/3 cup pineapple juice
  10. 1/4 cup orange juice
  11. 1/4 cup apple cider vinegar
  12. 2 garlic cloves, minced
  13. 3 tablespoons ketchup
  14. 2 tablespoons Asian sweet and spicy sauce (optional)
  15. 1 tablespoon soy sauce
  16. 3 teaspoons salt
  17. 1 teaspoon red pepper flakes
Instructions
  1. Soak kabob skewers in water for at least an hour (this will avoid burning them to a crisp)
  2. Mix the pineapple juice, OJ, apple cider vinegar ,garlic, ketchup, Asian sweet and spicy sauce, soy sauce, salt, red pepper flakes together in small bowl. reserve 1/3 and set aside.
  3. Add chopped chicken to marinade and let marinade for at least an hour
  4. Chop up all veggies and pineapple
  5. Layer the various veggies, pineapple and chicken onto skewer
  6. Brush some of the marinade from the chicken bowl on top of skewer toppings
  7. Grill for 5 minutes on each side or until veggies are slightly browned and chicken is cooked
  8. Brush some of the reserved sauce on top of the skewers the last minute or two on the grill
  9. Serve over a bed of rice and enjoy!

    These look sooo good! mouth is literally watering. i think adding some grilled shrimp could be a fancy and flavorful addition to these kabobz. 😀
