Thai Shrimp Salad w/ Peanut Dressing

20160509-Photo May 09, 6 24 27 PMI discovered Southern Breeze Sweet Tea late last year and fell in love with it’s classic sweet tea taste without the sugar/caloric guilt. (recap here) When Southern Breeze sent me their lemon flavored sweet tea and challenged me to create a flavorful & healthy recipe to pair with it; I instantly thought of a Thai inspired dish! 

Welcome the Thai shrimp salad with homemade peanut dressing.  I cut up a bunch of veggies frequently found in Thai dishes: red peppers, cucumbers, carrots; and added it to the mothership of greens- KALE! As far as the shrimp goes I marinated the shrimp in a mix of lemon juice, EVVO, cilantro, honey, garlic, salt & pepper for about an hour before sautéing. But the real flavor comes from the homemade peanut dressing! Made with natural creamy peanut butter, greek yogurt, soy sauce, honey -its so easy and delicious. Thai Shrimp Salad w/ Peanut Dressing

Ingredients
  1. For the Shrimp
  2. -1 pound thawed shrimp, deveined and peeled (can use either raw or already cooked)
  3. -1 cup lemon juice
  4. -2 garlic cloves, minced
  5. -1/4 cup olive oil
  6. -1/4 cup cilantro
  7. -2 Tbsp honey
  8. -sesame seeds
  9. For the peanut dressing
  10. -3 Tbsp natural creamy peanut butter
  11. -1/3 cup Greek Yogurt
  12. -1 Tbsp soy sauce
  13. -2 garlic cloves, minced
  14. -1Tbsp honey
  15. -1/4 cup cilantro
  16. -2 Tbsp fat free milk (add more as desired to make thinner)
  17. -1 tsp salt
  18. For the salad
  19. -4 Cups kale, chopped
  20. -1/2 cup red cabbage, chopped
  21. -1 red pepper, sliced
  22. -1 large carrot, sliced thinly
  23. -1 cucumber, sliced thinly
  24. -4 green onions, chopped
  25. -1/4 cup peanuts
Instructions
  1. -(for the shrimp) Throw all ingredients listed above in a ziploc bag and let marinate for an hour
  2. -Sautée shrimp over medium high heat with all of juices on a few minutes on each side until cooked and slightly brown from the sugar of the honey
  3. -Set aside and top with extra chopped cilantro and sesame seeds
  4. -(for the peanut suace) Place all ingredients above in a blender/food processor and blend until smooth
  5. -Set aside and refrigerate until ready to serve
  6. -Assemble all veggies, top with shrimp and pour on desired amount of peanut dressing

    Cant wait to try this! Looks so yummy and healthy ! question how do you think it would be with Almond butter? I know Thai food uses peanut a lot – just haven’t had peanut butter in ages. Thanks for the post and the pictures are fantastic

      Hey Lori,

      I am sure almond butter could work although the peanut butter really gives it a strong flavor!
