Fool Proof Guacamole

20160414-Photo Apr 14, 6 15 28 PMIt is not Cinco de Mayo without guacamole.  My friend, Ryan, gave us an official volcanic rock mortar and pestle for an engagement present a few years ago and we have definitely been putting it to good use.  All of that practice has allowed me to create a pretty fool proof guacamole recipe that is equally quick and easy.  Check out the recipe below and pair with this delicious clementine lime margarita!

Fool Proof Guacamole

Quick, Easy and Fresh way to make some delish Guac.

Ingredients
  1. -5 ripe avocados
  2. -2 tsp salt
  3. -1/2 tsp pepper
  4. -1/2 tsp paprika
  5. -2 minced garlic cloves
  6. -2 tbsp lime juice
  7. -1 tbsp lemon juice
  8. -1 tomato, chopped
  9. -1/4 cup red onion, chopped
  10. -2 Tbsp cilantro, chopped
  11. -Tortilla Chips
Instructions
  1. -Scoop small amounts of ripe avocado into your mortar
  2. -Smash with Pestle until about half of the avacado is smooth (leave half chunky)
  3. -Add garlic, salt, pepper, paprika
  4. -Smash again to help combine
  5. -Add lime & lemon juice
  6. -Smash until there are only a few chunks of avacado left
  7. -Add chopped cilantro, red onions and chopped tomatoes
  8. -Lightly combine
  9. -Top with a little salt and paprika
  10. -Serve with blue corn tortilla chips
