Cajun Shrimp and Grits

I first got hooked on the dish while on a girls’ trip to New Orleans during Mardi Gras and always find myself ordering it when dining out. So in honor of booking my tickets for the 4th annual Blog Societies Conference in Charleston, South Carolina this summer; I decided why not try making my own shrimp and grits!? I followed this recipe fairly closely and it turned out amazing. Cajun Shrimp & Gouda Grits

Ingredients
  1. 4 strimps bacon, chopped
  2. 1 cup chopped onion
  3. 2 garlic clove, minced
  4. 36 medium shrimp, peeled (about 1 1/4 pounds)
  5. 2 teaspoon Cajun seasoning
  6. 2 1/4 cups water, divided
  7. 2 tablespoon unsalted butter
  8. 1 cup milk
  9. 1 teaspoon salt
  10. 1 cup uncooked quick-cooking grits
  11. 4 ounces gouda cheese, shredded (about 1 cup)
  12. 1/2 cup sliced green onions
Instructions
  1. 1. Over medium heat, cook bacon halfway. Add onion; sauté 2 minutes. Add garlic; sauté 1 minute. Add shrimp to pan, sprinkle with Cajun seasoning, and cook 3 minutes, turning once. Add 1/4 cup water, scraping pan to loosen browned bits. Remove from heat; add butter, stirring to melt. Cover and keep warm.
  2. 2. Bring milk, salt, and 2 cups water to a boil over medium-high heat. Reduce heat. Gradually add grits, and cook until thick and bubbly (about 5 minutes), stirring constantly with a whisk. Remove grits from heat; add cheese, stirring with a whisk until cheese melts.
  3. 3. Spoon grits evenly onto 6 plates. Top evenly with shrimp, bacon mixture, and green onions.
