Corned Beef & Cabbage Sliders

Corned Beef & Cabbage never excited me until I saw this slider recipe version from  The Cookie Rookie.  She had me at Guinness Mustard you guys!  These babies are super easy to make. Just through in some corned beef + spice package, veggies and a few other ingredients and let it cook in your slow cooker while you are at work. When you get home all you have to do is saute the cabbage and mix together the mustard and you are ready to dive in! A great spin on a classic for St. Patrick’s Day. Check out the recipe below:

Ingredients
  1. 1 corned beef brisket with spice package
  2. 4 cups water
  3. 2 tablespoons sugar
  4. 2 tablespoons apple cider vinegar
  5. 1 cup potatoes, diced
  6. 1 cup white onion, sliced
  7. 1/2 cup carrots, diced
  8. 1/2 cup celery, diced
  9. 1/4 cup Dijon mustard
  10. 1/4 cup honey mustard
  11. 2 tablespoons Guinness (or stout beer)
  12. 1 tablespoon dark brown sugar
  13. 8 sweet rolls, cut in half to make buns (I used King's Hawaiian)
  14. For the cabbage
  15. Green cabbage, shredded
  16. 2 tablespoons olive oil
  17. 1 tablespoon butter
  18. 2 garlic cloves, minced
  19. 1/4 cup yellow onion, diced
  20. 1 tablespoon apple cider vinegar
  21. salt and pepper to taste
Instructions
  1. In a large slow cooker, place water, sugar, and vinegar on high heat.
  2. Add brisket and spice packet to mixture.
  3. Place veggies in slow cooker and spread around all sides of the brisket.
  4. Cook on high for 5-6 hours.
  5. When brisket is fully cooked, slice into 1/4 inch slices.
  6. Whisk together both mustards, Guinness, and brown sugar.
  7. In a large skillet on high heat, cook the cabbage with the olive oil. Add the onions and garlic. After a few minutes add the butter, salt and pepper.
  8. Saute until slightly brown.
  9. Assemble the brisket, mustard and cabbage on a roll.
  10. Serve the cooked veggies on the side.
  11. Enjoy!
