Spicy Chicken Avocado Wraps

As I mentioned here,  I have been using my new panini maker a lot lately. Shredded crock pot chicken is common in our household and I decided to spicy it up and stick it in a burrito with all the fixins. What did it turn into? Ta-da! A delicious spicy chicken avocado wrap that will keep you full and satisfied! Make a bunch, wrap in foil and you now have an exciting work lunch all week long.

Spicy Avocado Chicken Wrap

Ingredients
  1. -6 boneless chicken breasts (thawed/trimmed/cleaned)
  2. -2 packs of taco seasoning
  3. -1 jar of salsa
  4. -1/4 cup of hot sauce (your choice)
  5. -large burrito sized tortilla wraps (try a flavor! I love tomato and basil!)
  6. -Sliced Avocado
  7. -Crispy bacon, chopped
  8. -Tomatoes, chopped
  9. -Red onion, minced
  10. -Lettuce (I like to use spinach
  11. -Sliced pepper jack cheese (or really any cheese!)
  12. -(Optional) Caesar dressing (or ranch/mayo!)
Instructions
  1. Place chicken breasts in crockpot.
  2. Pour hot sauce, salsa and taco seasoning on chicken
  3. Cook on high for 4-5 hours or until chicken is cooked through (or low for 8)
  4. Remove Chicken and shred with two forks
  5. Put aside
  6. Grab your burrito and lay two pieces of cheese
  7. Add your veggies
  8. Add chicken
  9. Top with dressing
  10. Sprinkle bacon
  11. Wrap tightly
  12. Place in hot panini maker and lightly press
  13. Cook for about 2 minutes (until there are grill marks and the cheese has melted)
  14. Enjoy!
