Santa Fe Breakfast Burritos

Photo Jan 23, 9 55 11 AMI always look forward to lazy Sunday mornings.  They allow plenty of time to make something delicious for breakfast.  These Santa Fe Breakfast Burritos are so good you will want to eat them all week long. (and can! Just wrap them in aluminum foil and throw in the fridge) It is supposed to be beautiful today in Maryland and these bad boys will keep me satisfied for a full day outside.   1. 5 eggs
  2. 2 Tbsp milk
  3. ¼ cup red onion, diced
  4. ¼ cup green bell pepper, diced
  5. 1 (or more if you like) jalapeño, diced
  6. 2 garlic cloves, minced
  7. 2 tsp paprika
  8. 2 tsp chili powder
  9. 1 tsp salt
  10. 1 tsp pepper
  11. Pepper Jack Cheese
  12. Bacon, cooked
  13. Spinach
  14. Mild Salsa to taste
  15. 2 Tbsp Sour Cream
  16. Burrito Tortillas
  1. In a medium bowl, whisk eggs together, add milk and diced veggies, garlic and spices, mix well
  2. Scramble eggs over medium heat until cooked
  3. Spread sour cream on tortilla
  4. Add eggs, top with salsa, bacon, cheese and spinach
  5. Wrap and cook on panini press until cheese is melted and tortilla is crispy on top and bottom.
