Roasted Vegetable Panini

When I opened a panini maker given to me by my cousin for Christmas, I could tell the Hubs was less than thrilled to have another large kitchen gadget.  “Can’t our George Foreman Grill make paninis?” he said. Nope! not like this! I was so excited to try this new bad boy out. I found this recipe and decided to give it a whirl.  The panini maker worked way  better than expected and I was left with a Panera worthy pressed panini.  As far as the roasted vegetables go, I could eat them alone for my entire meal! You can add whatever veggies you desire and switch out the cheeses as well. I used shredded mozzarella and feta. Roasted Vegetable Panini

Ingredients
  1. 2 green bell peppers sliced
  2. 1 red bell pepper, sliced
  3. 1 onion, sliced
  4. 8 oz. mushrooms, sliced
  5. Asparagus, sliced down the middle, long ways (hot dog style)
  6. Shredded mozzarella
  7. Feta, crumbled
  8. Pesto (homemade recipe in previous post!)
  9. Italian bread (2 slices per sandwich)
  10. Olive oil
  11. Kosher salt
Instructions
  1. Preheat oven to 425.
  2. Toss all veggies together with olive oil and salt
  3. Place on baking sheet
  4. Roast for 25 minutes or until your veggies are roasted to your liking
  5. Spray your panini maker (or other gadget) with cooking spray
  6. On one slice of the sandwich place your mozzarella and feta cheese
  7. Layer a generous layer of roasted vegetables
  8. Spread pesto on a second slice of bread and place on top of other piece
  9. Press/Lock tight and cook in panini maker for 3 minutes or so- or until bread is browned with "grill" marks and cheese is melted
