Homemade Chicken Pho

I still remember my first pho experience,  I was in NYC visiting my sorority big sister. Nikki is one of the most adventurous people I know when it comes to food-I often poke fun of her interesting food choices but secretly admire her for it.  After a night on the town, Nikki suggested getting some late night pho. I had heard of pho, but what was the big deal? Isn’t it just fancy chicken noodle soup? Well kind of, but its jam packed full of flavor, healthy and warms you to the bone.  During last week’s snow storm, I decided it was the perfect time to make my very own pho.  I read a few recipes (like this one) and came up with with my own version below that was a hit.

Homemade Chicken Pho

Ingredients
  1. 8 cups of Chicken Stock
  2. 6 chicken breasts
  3. 1/2 yellow onion, sliced
  4. 2 tablespoons of light brown sugar
  5. 1 tablespoon garlic powder (of 1 garlic clove, minced)
  6. 2 tablespoons of fish sauce
  7. 1 cinnamon stick (yes cinnamon!)
  8. 1 2-inch piece fresh ginger, peeled and thinly sliced
  9. 6 oz of rice noodles
  10. 1 cup of fresh basil leaves
  11. (Toppings)
  12. 3 sliced jalapeños
  13. 12 oz bean sprouts
  14. 2 lime, quartered
  15. 5 radishes (sliced thin)
  16. 1/3 cup snap peas
  17. 1/4 cup cilantro
  18. 1/2 a green bell pepper, sliced
  19. Sriracha
  20. Soy Sauce
Instructions
  1. Place chicken in crock pot
  2. Pour in chicken broth and add onions
  3. Cook on high for 2 hours
  4. Add sugar, garlic, fish sauce, cinnamon stick and fresh ginger and stir
  5. Cook on high for 2-3 hours (or until chicken is cooked)
  6. Remove ginger and cinnamon stick
  7. Remove chicken and shred
  8. Replace chicken into crock pot
  9. Add basil and cook on low until you are about to serve
  10. About 15 minutes before serving, add the rice noodles (if you leave them in too long they will break)
  11. Serve your toppings on the side
