French Onion Soup

Photo Jan 20, 11 58 15 AM A big winter storm is set to hit the DMV area this weekend. Like most folks, I will be hunkered down with a warm fire, book, wine and hot soup! There is  something so comforting about soup on a cold day!-Add some ooey gooey cheese and nothing is better! In comes the homemade French Onion soup topped with Gruyere cheese, which may even convince you to venture outside and play in the snow!

I read a bunch of French Onion Soup Recipes, but most of them required hours of cooking/prep. I wanted my soup ready ASAP so I was pretty happy to find this recipe. I altered it very slightly and loved the outcome!

French Onion Soup

Quick and easy homemade french onion soup!

Ingredients
  1. 4 yellow onions, sliced thinly
  2. 4 tablespoons butter, softened and cubed
  3. 3 garlic gloves, minced
  4. 2 tablespoons flour
  5. Β½ dry white wine (optional but worth it)
  6. 4 cups beef stock
  7. 1/2 tablespoon Worcestershire sauce
  8. A few fresh sprigs of thyme (+ some for garnish
  9. Fresh Baguette, slices
  10. Slices Gruyere Cheese (can also use Swiss or Mozzarella)
Instructions
  1. In a large pot, melt the butter and add the onions
  2. Sautee onions for about 15 minutes until browned
  3. Add in garlic and flour and sautΓ© for another 5minutes
  4. Slowly add the white wine and cook for 5 minutes
  5. Add the beef stock, Worchester, and thyme
  6. Simmer for 20 minutes
  7. Turn on oven broiler
  8. Pour soup into crock bowls (French onion bowls/oven safe)
  9. Slice Baguette and place three slices on top of each bowl
  10. Place cheese over bread
  11. Bake for 5 minutes or until the cheese is golden and bubbly (but not burnt)
  12. Carefully remove and enjoy!
