Delicious soup is something I regularly crave on a chilly fall day. This White Bean, Spinach & Kielbasa Soup not only hits the spot but can be whipped up in no time. I followed this recipe for the most part with only a few changes.
What you need:
1 pound of cooked & browned kielbasa
2 1/2 cups chicken broth
2 garlic cloves, minced
2 teaspoons oregano
1 1/2 tablespoon olive oil
2 cans of Cannellini beans, drained
2 large tomatoes, diced
6 cups spinach leaves, whole (they will down to nothing.. don’t worry!)
2 cups mushrooms (cut big ones in half)
salt & pepper to taste
What to do
-Cut kielbasa into small bite sized pieces, hot dog style, and cook until browned
-Put all ingredients (except spinach) in your crock pot and cook on low for 4 hours or until beans are tender.
-Add your spinach at the end and stir, once spinach is wilted it is ready to serve!
