I love a good cheese ball during the holidays; especially one that is both sweet and savory. I found this recipe and decided to give it a try for my work Thanksgiving potluck.  Needless to say it was a hit and jam packed full of flavor.

 

Onion, Cranberry & Pecan Cheeseball

Ingredients
  1. 8oz of softened cream cheese
  2. 2 cups sharp white cheddar cheese, shredded
  3. 1 cup craisins (I added a bit more)
  4. 1/2 cup green onions, chopped
  5. 1/4 cup parsley, chopped
  6. 1 cup toasted pecans
Instructions
  1. Mix cream cheese and shredded cheese thoroughly
  2. Add onions, crasins & parsley & mix
  3. Shape into a ball
  4. Toast pecans by heating 2 tsp butter and 1 tsp brown sugar w/pecans in a small sauce pan, stirring until toasted slightly- watch them carefully so they do not burn!
  5. Roll ball into pecans wrap in plastic
  6. Refrigerate before serving
Notes
  1. I added slivered almonds because I burnt half my pecans… watch those pecans guys!
