Market Bean Salad

Ingredients
  1. 1 pound raw black eyed peas
  2. 1/2 pound raw split peas
  3. 1/2 pound lentils
  4. 1 cup sprouts
  5. 1 pint ripe cherry tomato medley, halved
  6. 1/2 small red onions, chopped
  7. 3 garlic cloves, minced
  8. 1/3 cup chopped flat leaf parsley
  9. 1/4 cup apple cider vinegar
  10. 1/4 cup extra virgin olive oil
  11. 1/4 cup lemon juice
  12. Salt and pepper
Instructions
  1. Cook beans separately according to bag directions in salted water
  2. Drain and rinse beans to bring down temperature
  3. Add onions, garlic, parsley & sprouts; mix well
  4. In a separate bowl, whisk together apple cider vinegar, olive oil, lemon juice & salt & pepper to taste
  5. Pour vinaigrette mixture onto beans, mix well
  6. Top with tomatoes medley
  7. Serve cold
