Coconut Lime Cupcakes

I wanted to make a sweet treat for my friend, Casey’s Birthday party this past weekend and these coconut lime cupcakes were perfect and so easy to make. The tropical flavors pair perfect with summer!
Any-who these are delicious.. you are going to want to make them over and over again!
What you need:
For the Cupcakes:
– 1/14 C flour
-1 tsp baking powder
-1/2 tsp baking soda
-1/2 tsp salt
-2 eggs
-3/4 C sugar
-1/2 C EVVO
-3 tsp lime zest
-Juice of 1 lime
-1 tsp coconut extract
-3/4 C coconut milk (from can)
For the frosting
-8 oz. cream cheese, softened
-1/2 C unsalted butter, softened
-1 1/2 tsp coconut extract
– 1 1/2 C powdered sugar
– 3/4 C of toasted coconut
-Thin lime slices cut in half
What to do:
Cupcakes
-Combine flour, baking powder, baking soda and salt in a smal bowl
-Whisk eggs and sugar in large bowl
-Add oil, lime zest, lime juice, coconut extract & coconut milk to egg mixture
-Slowly mix the dry ingredients into the wet, until just combined
-Line cupcake pan with paper cupcake liners and fill 2/3 full
-Bake at 400 degrees F or until a toothpick is clean when removed from center of cupcake
Frosting
-Mix cream cheese in mixer
-Add softened butter 1 Tbsp at a time and beat thoroughly 
-Add coconut extract + powdered at same time until combined. Do not over mix
-Scoop frosting into pastry bag and frost cupcake (or do what I do and put inside a ziploc and snip edge!)
-Garnish with lime wedge
-Toast coconut in small pan until slightly brown and sprinkle over cupcakes
Make sure to squeeze lime wedge on top of cupcake before eating! Enjoy!
