To Go Breakfast Eggs!

I get sick and tired of the plain old banana or cereal bar for breakfast on the weekdays.  Making pre-made individual little {healthy}  egg casseroles has been something I have been doing off and on for a while now and really makes breakfast at work enjoyable and yummy!

Here is what you need:

Muffin tins!
Eggs & Egg Whites
Cooking spray
Spinach
Onions
Mushrooms
Zuchinni
Tomatoes
Turkey Bacon 
Shredded Cheese
Salt
Pepper
Here is what you do:
Spray the muffin tins with the cooking spray and preheat your over to 350 degrees
In a large bowl mix together a dozen eggs and a carton of egg whites.
Add chopped up veggies and turkey bacon {or any other filling you can thing of} and wisk together. Add salt and pepper to taste.

Use a ladle to  pour the egg mixture into each muffin tin.

Top each section with some shredded cheese.

Cook for 20-25 mins.

Pop out of tins and store in a container. They will be tasty all week!
