Spinach, Ricotta and Tomato Stuffed Chicken Breast

While in the grocery store this past weekend I was pondering of what to make. I remembered pinning a stuffed chicken recipe on pinterest but did not feel like searching for it on my phone.  So I grabbed some ricotta, grape tomatoes, spinach, bread crumbs and some chicken.

What you will need:

Grape Tomatoes- {chopped}
Fresh Spinach {chopped}
Ricotta Cheese {part skim}
3 garlic cloves {minced}
Parmesan cheese {to taste}
Oregano {to taste}
Basil {to taste}
Salt {to taste}
Pepper {to taste}
Chicken Breasts
Bread crumbs
toothpicks 

What you need to do:

Preheat oven to 400 degrees

Trim each chicken breast and cut a slit/pocket in each
mix together the tomatoes, spinach, ricotta, garlic, & parm.
Add spices to taste and stir throughly 
Stuff the mixture into each pocket of the chicken 
secure tightly with toothpicks

Roll chicken breasts in bread crumbs
Heat {oven safe} skillet on Medium High with some olive oil
Place Chicken on skillet and cook for a few minutes on each side or until golden brown.
Place into oven for about 20 minutes or until chicken is cooked all the way through
Take out and enjoy!
