With all this snow we have been having here in Frederick, Maryland.. I was craving something warm and comforting this past weekend. If its going to be cold.. you have to have foods to counteract it right!?
So while we were at the grocery store I grabbed some impromptu ingredients to make some chili!
Here is what you will need:
-1 green bell pepper
-1 big can of diced tomatoes
-1 can of tomato paste
– 2 garlic cloves (minced)
-1 can of corn
-1 large can of red kidney beans
-1 can of black beans
-1 yellow onion
– chili powder
Mix everything together in a large pot; except the spices/herbs, meat, onion, green pepper & jalapeno and heat on low stirring occasionally.
Next, brown the meat in a pan along with the chopped onion, green pepper and jalapeno.
Once cooked, pour into large pot and stir.
Add spices to taste.
Let it simmer on low heat for about 3 hours- stir occasionally.
Sit back and enjoy the delicious smell.
I topped with cheddar cheese and sour cream.
Cannot wait to have some leftovers tonight!
