Spicy Walnut Kale & Quinoa Salad!

I have been on this Kale and Quinoa kick lately and I was so excited when I found this recipe. I had some left over walnuts and made a few tweaks to the recipe. It turned out so well that I ate the salad for lunch and dinner all week! This is definitely going to make it into the rotation of repeated recipes! It is so easy to make and healthy. Enjoy!


Cook 1 box of regular quinoa 
Stir in:
 a ton of chopped kale (the kale will wilt as you stir from the heat of the quinoa)
2 hot (any you like) peppers diced
1 green pepper
1 cup shredded carrots
1 cup walnuts
Dash of Salt
Dash of Sugar
In a separate bowl combine:
3 Tbsp extra virgin olive oil
3 Tbsp white vinegar
3 Tbsp Soy Sauce
Red pepper flakes to taste
Pour into the bowl and mix around! Now Eat!
