I love Quinoa but have never tried cooking it. I found this recipe and decided to make up a concoction based mostly off of it. So here you go people.. Quinoa Tex Mex…
I started off by cutting up:
– a half of a red onion,
-3 big juicy tomatoes
– 1 green pepper
-and chopped up a cluster of cilantro
I then cooked the box of Quinoa which takes so much less time than rice!
I then added:
-1 can of corn
-1 can of black beans
– 1 cup Lime juice
– 1/3 cup Lemon Juice
– Some dashes of chili powder
-Splashes of hot sauce (Texas Pete!)
– Salt and Pepper to taste
– 3 tablespoons of olive oil
When putting this into my serving bowl I decided to add some avocado. I only have one left at the time but adding a few cut up avocados to this mix would be great.
Mix it all up!
And add any other elements it may need to fit your liking.
And TA DA!
Now you have a delicious and healthy dinner!
