I found this recipe from Rachel Ray magazine and thought it looked amazing! I am all for throwing some chicken in the crock pot then stirring in some things to create a yummy meal! I wanted to try and make this a tad more healthy than the original recipe.
Heres what you’ll need:
-7 thawed chicken breast
– 2 teaspoons of chopped thyme (I had this in my garden but if you do not have its okay to leave out in my opinion
-1/2 pound of turkey bacon, chopped
-1 minced garlic clove
-1 1/4 cup non-fat plain greek yogurt
– 1/2 onion
– 3 cut up tomatoes
-Salt & Pepper to tast
I only had this for a sandwich one time. I had a nice wheat hoagie roll with mustad, tomato and lettuce.. it was delicious but also great by itself!
Throw the chicken breast in the crock pot and fill with water so it is slightly covering the top of the chicken.
Cook on high for 4 hours, drain and let cook for a few.
Shred the chicken with two forks.
Cook turkey bacon until crispy, let cool then chop into little pieces.
Mix in the chopped turkey bacon, thyme, garlic, onions, tomatoes, Greek Yogurt and salt and pepper.
This was good for about 10 meals! Perfect for lunches!
