Cinco de Mayo celebration

How many of you took advantage of the beautiful weather this past Sunday and celebrated Cinco de Mayo?  Wade and I decided to make homemade tacos and grapefruit margaritas!
We decided to sauteed green peppers, onions, cilantro and some rotel in with the meat along with the usual seasonings and it turned out so flavorful! {garlic powder, salt, taco seasoning, etc}To try and copy cat Chipotle we made cilantro lime white rice. It turned out great.. but not as good as Chipotle’s!
 I also made an avacado tomatillo cilantro salsa  and queso el fresco for chip dipping!

For the avocado tomatillo cilantro salsa:

-Husk and quarter 3 tomatillos
-1 1/2 avacado
– 2 tablespoons of sour cream
– handful of cilantro
-1/4 lime juice
-splash of lemo juice
-salt to taste
Mix everything in a food processor and enjoy!

For the queso I cheated a bit.  I just bought a block of queso cheese and melted it with some milk in a sauce pan. I added some salt and half a can of hot rotel. 
 The grapefruit margaritas are super easy to make.  All you need is some ruby red grapefruit juice, your favorite tequila, juice of one lime, lime wedges for garnish and salt!

Mix it all together! Ole!
For a little spanish flair I made a little decoration our of colored tissue paper to add to our deck.
